Position Summary:

Responsible for ensuring the consistent and efficient management and for the performance of all operational aspects of the hotel’s Food & Beverage Division related to creating the guest experience and to ensure that the various departments are profitable and operate according to the standards set for the brand in general and the hotel specifically. To support Hotel management to achieve all defined goals and represent the General Manager in a pro-active approach during his absence in all respective responsibilities.

Main Duties

  • To function as the Business Manager and a Marketing Specialist for the Food & Beverage Department, to ensure the outlet, retail and banquets operate successfully and are individually profitable in accordance with the standards of the hotel.
  • To ensure that the department’s activities are aligned with the respective corporate strategy, and that the hotel actions have been implemented where appropriate.
  • To maintain strong, professional relationships with the relevant representatives from competitor hotels and other organizations and conduct regular divisional communication meetings and ensure that departmental briefings and meetings are effective and conducted as necessary.
  • To participate in the formulation of the Annual Operating Budget in determining the division’s expenses, operating equipment and FF&E requirements in line with the compilation of the Annual Business Plan.
  • To prepare monthly forecasts and schedule resources accordingly
  • To work with Executive Chef and to take corrective action where necessary.
  • To maximize associate productivity through the use of multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.
  • To ensure that all associates deliver the brand promise and provide exceptional guest service at all times while creating memorable experiences.
  • To ensure that associates provide excellent service to internal customers in other departments as appropriate.
  • To conduct frequent and thorough inspections together with the Executive Chef of the Food & Beverage operation in line with HACCP guidelines and to ensure that the workplace is kept clean and organized, both at the front and back of the house as well as public areas.
  • To be demanding and critical when it comes to service standards.
  • To frequently taste Food & Beverage in outlet and be demanding and critical when it comes to Food & Beverage quality.
  • To ensure that all company minimum brand standards have been implemented, and that optional brand standards have been implemented where appropriate.
  • To prepare a yearly marketing plan for outlet which is the basis of the Food & Beverage Annual Marketing Plan.
  • To continuously seek ways to assist the outlet to maximize their revenues and profits.
  • To monitor and analyze the activities and trends of competitive restaurants, bars and other hotel's banqueting departments.
  • To maintain a good rapport and working relationship with staff in the workplace and all other departments.
  • To ensure that effective training programs implements for staff with the Training Manager and Departmental Trainers.
  • To develop departmental trainers, assign training responsibilities and meet with Departmental Trainers monthly.
  • To oversee the punctuality and appearance of all associates, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards.

  • Proven experience in Banqueting, Restaurant and Retail Food & Beverage and Hotel Operation.
  • Must have the ability to anticipate guest needs, change goals and direction quickly and multitask is essential to success in this role.
  • Strong analytical and organizational skills.
  • Results oriented and focused on continuous process improvement.
  • Proven ability to effectively organize and manage time in order to meet deadlines and internal and external requests.
  • Excellent verbal and written communication skills in English
  • Ability to prioritize multiple commitments.
